Delicious Summer Cooking Ideas

I realize that for some of you summer may be technically over, but here in Southern Italy, it's still sunny and warm. Actually, September is the best time to be here, because it's not so hot and humid and there's less people on the beach.

Normally, I would share my recipes and photos with you, but I've been a little bit lazy these days and I haven't been taking photos of any of my latest cooking adventures. So, I'm taking the simple way out and sharing with you some lovely Summer Recipe Ideas from my go-to blogs for great food photos and ideas that also can be made throughout the year. 

The great thing about these recipes is that they use fresh ingredients, are simple to make, beautifully presented and downright delicious!

This idea is from Heather Cameron's blog - A Day in the Country, who is also from my hometown Vancouver. I hope I get to meet her one day. I love reading her blog about country life and she's so inventive and creative.

Panzanella Salad 
serves 4
1-2 day old country style loaf, diced
4 tablespoons olive oil
salt and pepper
3 ripe plum tomatoes, diced
1 small red onion, sliced
1-2 cup black olives
1lbs pasta, like penne, cooked
3 tablespoons parsley, chopped
1 bunch fresh basil, just the leafs,
1-4 cup olive oil
4-6 tablespoons good quality balsamico

Apple Spinach Salad with Spiced Nuts
1 bag pre-washed spinach
1-2 granny smith apples, cored and sliced thinly
1/4 cup crumbled feta cheese
1/2 cup spiced caramelized nuts 


Chicken Pesto Panini
1 loaf Ciabatta bread, cut horizontally then in about 6 pieces
6 Tbsp prepared pesto
Mozzarella cheese
1 cup Baby spinach leaves
1/2 cup (ish) Sun-dried tomatoes
1-2 cups shredded rotisserie chicken meat

Curried Grilled Cheese with Pear, Chutney and Brie
1-2 cup butter, room temperature
2 tsp mild curry powder
3 slices naan bread
4 tbsp mango chutney
6 oz Canadian Brie, thinly sliced while chilled
1 ripe pear skinned and thinly sliced
